Pasta Salad
I love carbs, period..!! Needless to say excess intake of carbs can result in getting fat. But I just cannot give up , I love starchy foods :) so instead of regular high carb pasta with cheese I make this pasta salad so often to satisfy my carb cravings. This pasta salad is packed with protein and veggies which is wholesome as a meal or snack. Though carbs in excess are bad for health , enough amount should be taken everyday to make the tummy and mind happy. Only preparation for this salad takes time but once preparation is done , we can make this salad in jiffy.
Ingredients:
Pasta - 1 cup ( your choice fusili,butterfly,elbow,macaroni etc.)
Chickpeas - 1 cup ( soaked overnight or for 8 hrs)
Cucumber - 1 medium sized
Onion - 1 small
Corn- 1 cup (boiled)
Salt - as needed
Green chillies - 2 medium finely chopped
Cilantro/Coriander leaves - 3 tbsp finely chopped
Dressing
Olive oil - 3 tbsp ( or according to taste)
Lime/lemon juice - 3 tbsp
Black pepper - crushed 2 tbsp
Method:
1. Boil the soaked chickpeas in enough water till tender , I used pressure cooker for 4 whistles.
2. Do not throw away the water in which chickpeas is boiled , use that water to boil pasta till aldente or till tender.
3. Cube peeled cucumber,onion.Boil the corn ( use microwave for quick cooking)
4. Mix boiled corn,onion,cucumber,chickpeas,pasta and cilantro/coriander well.
5. Now take a small whisk and bowl , in the bowl add olive oil,black pepper and lime/lemon juice.
6. Whisk the dressing very well til combined.
7. Now drizzle the dressing and mix/toss very well .
8 . Taste for salt and add accordingly.
9. Chill in the refrigerator for couple of hours and serve.
Tips:
1. This pasta salad is best served when chilled.
2. This salad stays fresh in the fridge for 2 days.
3. You can use canned chickpeas to save time and make instantly
4. Feel free to use any veggies you like but this combo is my favorite.
5. You can substitute the chickpeas for black beans,lima beans,kidney beans etc.
6. Dont make it too spicy it will spoil the subtle taste of the salad.
7. Dont add leafy greens like spinach as they tend to become soggy but you can add at the time of serving.
8. This pasta salad is kids favorite and big hit in party gatherings.
9. Feel free to eat more as this is nutritious and yummy :)
