Tindora fry Dondakaya fry

I love Tindora or Dondakaya as called in telugu especially fry item - one of my favorite in my childhood and ofcourse even now . I love to eat tindora fry with hot rice and ghee ..YUMMMmmm !! Or even with Curd/Yogurt rice. This is very easy to prepare , make sure you get the tender ones so that they fry and cook in less time. If you can fresh ones its more better than frozen ones. You can cut these in long slices or into round discs or even chopped into squares. I like to make into thin long slices :)

Try this tindora fry and you will make atleast twice a week.

Ingredients :

Tindora - 500gms
Salt - as needed
Oil - 1 tbsp
Chilly powder - as needed.

Method:

1. Wash the tindora thoroughly and cut them into your desired shape.
2.  At this time you can either steam them first and then fry but with tender tindora you can directly          cook and fry them in a covered pan.
3.  If you are steaming them make sure they dont get mushy but cooked. then fry them in oil
4. If you are not steaming , then in a heated pan add oil , add the tindora pieces and cover with lid till     they become soft , stirring occasionally.
5. Once you feel that they got cooked , remove the lid and fry in open pan till you get golden brown       or as per your need.
6. Finally add salt and red chilly powder. You can add salt while steaming if you want.

Tips :

1. To save lot of time I usually buy frozen cut tindora , all you have to do is rinse them once and             directly throw in the pan.
2. Tindora is very less in calories so enjoy as much as you want :)
3. Tindora fry is kids favorite :)
4. I didn't add tempering or onions but if you want you can add onions,cumin,musard seeds,curry           leaves etc . This will also increase the volume of the curry.
5. If you use nonstick pan then it takes less than a spoon of oil but making this fry in cast iron or             aluminum kadai will need more oil
