Yummy Brown Fried rice ..!!

Hi Guys .. This is a simple recipe which is helpful for those who trying to lose weight and experimenting with brown rice. I am right now a student and a wife with a very busy schedule. So I have less time for cooking :P  .. So I experimented this simple easy recipe and took it for lunch ... which came out delicious and super tasty ... :) .. So here is the recipe .. You need
Brown rice : uncooked 1 cup .
Frozen mix veggies : 1 Cup
Jeera/Cumin : 1 Tbsp
Chaat masala : 1Tbsp
Garam masala : 1 tsp
Dry mango powder (amchur) : 1 Tbsp
Salt : adjust according to taste
Lemon juice : 1 Tbsp
Half onion : chopped
Green chillies : 6 Small Chopped
Oil : 2 Tbsp

Method:

1.Cook the brown rice in pressure cooker or rice cooker. I cooked in rice cooker with 1:3 ratio of rice and water. Well lets see here, if you have leftover rice you can use it , leftovers are much better than something junk isnt it ? :)

2. I used frozen veggies , but you can use fresh veggies and again you can use any veggies depending on your taste , I used carrots,lima beans,peas,beans,corn etc. Also you can add bell peppers,cabbage for crunchiness.

3.So First take a pan and heat it for few minutes, add oil and let jeera seeds sputter( and instead you can use jeera powder), then add onions and green chillies .

4. Saute the onions , fry them lightly if you like them crunchy, I fried them till it turned translucent or pink in color.

5. So now add the fresh veggies and cook them till they become tender but not mushy .

6. Add chaat masala, garam masala, dry mango powder and salt ( again this is optional, it gives tangy flavor) and mix well.

7. Now add the rice and lemon juice(optional) and mix well, cook for another 2 to 4 minutes on low flame.

8. Serve hot , you can serve along with some Chilled Curd/Yogurt/Raitha.

Note : 

This is a simple recipe and very healthy since we are using brown rice and lots of veggies . Adjust the masala's to your taste.This is my time saving yummy recipe .
